This easy veggie hash is a great side dish to accompany roast chicken or pork.
Veggie Hash
(4-6 servings)
2 slices bacon
1/2 small vidalia onion, diced
3 cups diced butternut squash (I used pre-diced squash available at Whole Foods)
2 apples, diced
1 bunch kale, stemmed & coarsely chopped
1/4 tsp sea salt
- Cook bacon slices in large skillet (or even a wok!) over medium heat, until crispy. Set aside cooked bacon, but leave the bacon fat in the pan.
- Increase heat to medium-high and saute onion until transparent, ~3 minutes.
- Add the squash, apples, kale and salt to pan. Continue cooking for 15-20 minutes, until squash is cooked through.
- Remove pan from heat. Crumble bacon over mixture and toss to combine.
This dish also freezes well!
