It’s been a busy Monday morning in my kitchen, cooking up goodies for the week. I usually do most of my cooking on the weekends, but I’m off work today, so I have some extra time. I’ve whipped up plenty of Oatmeal Blueberry “Muffins” for this week’s breakfasts, as well as a batch of my new favorite gluten-free & egg-free chocolate chip cookies (recipe coming soon!). I’ll be bringing the cookies to my monthly bookclub meeting, so we’ll see if non-Celiacs enjoy them as much as I do 🙂
