Fish makes a great weeknight dinner because it cooks up real quick without much fuss. I especially like halibut for its mild flavor and equally mild smell – which means no lingering fishy odor in the kitchen afterward!
Easy Weeknight Halibut
Ingredients:
~1 lb fresh wild caught halibut filet
2 Tbsp melted grass-fed butter or ghee
1 Tbsp grated parmesan
2-3 Tbsp gluten-free Italian bread crumbs (I used Aleias)
- Heat oven to 375°F and line baking sheet with aluminum foil
- Place halibut filet on baking sheet and brush melted butter over the top and sides
- Sprinkle parmesan, then bread crumbs, on top of filet
- Bake in oven for ~20 minutes. Fish is done when white and flakey.
Serve on a bed of greens with a squeeze of lemon.
